Old Habits Artisanal Fish Sauce - Aged Roe Herring (200ml bottle)
A Traditional Fermented Fish Sauce
Old Habits Fermentation Co. honours a 2,000-year-old tradition with its fermented fish sauce, made using our Vancouver Island Sea Salt. Every batch is naturally fermented and aged to develop depth, balance, and umami complexity.
Pure and Carefully Crafted
Founder Nathan Gawalko draws on experience from some of the world’s top restaurants to slow the process and allow flavour to develop naturally. Using spring-caught herring with roe, this sauce achieves a clean, mild umami that is both familiar and distinctive.
Versatile in the Kitchen
Beyond finishing tofu, seafood, or grilled vegetables, a few drops enhance soups, sauces, marinades, and even fermented foods. Its nuanced flavour adds depth without overpowering other ingredients.
Naturally Mineral-Rich
Made with only two ingredients—herring and Vancouver Island Sea Salt—this fish sauce is all-natural, additive-free, and retains the subtle minerals of our pristine waters.
Two options to choose from: 1 year aged (white cap) or 5 years (red cap). Flavour intensifies with age.
