What Makes Vancouver Island Sea Salt Special?
LOCATION
Our salt begins with a distinctly Canadian merroir—a pristine stretch of Vancouver Island’s Pacific coastline. Located on a protected 400-acre farm with over 2 km of untouched ocean frontage, our saltworks draws directly from some of the fastest-moving tidal currents in the world. A volcanic rock shoreline naturally limits sediment, contributing to exceptionally clean seawater and purer crystals. Year-round access to this high-quality seawater means our brines are never supplemented with mined rock salt, unlike producers who must add it when local seawater is limited. This rare combination of geography, flow, and uninterrupted access sets the foundation for truly remarkable sea salt.
FILTRATION
Our seawater undergoes multi-stage micro-filtration, removing impurities while preserving the salt’s naturally occurring trace minerals. Once seawater enters our saltworks, it remains within a controlled system until it becomes the final product—unlike most sea salts, which are evaporated in open air with no filtration.
CRYSTALLISATION
Using purpose-driven crystallisation techniques, we slowly transform seawater into specific crystal structures depending on how the salt will be used. Hand-harvested, delicate pyramid flakes for finishing, are light, crisp, and designed to dissolve slowly on the palate. Finer crystals are created for cooking, allowing for faster, more even dissolution and consistent flavour distribution. By matching crystal structure to purpose, we craft salt that performs exactly as intended.
CERTIFICATION
To independently verify purity, our sea salt is routinely tested by accredited third-party laboratories ensuring compliance to Codex standards, providing external validation of our sourcing, filtration, and controlled production process.
CONSERVATION
We don’t just harvest salt—we steward the resource. Many sea salt producers return by-products directly to the ocean, but we take a different approach. Our process thoughtfully repurposes every drop of seawater into value-added products such as fresh water and mineral-rich brines.
Being located on a working farm allows us to put these resources to use on-site—enriching soils, supporting sustainable agriculture, and closing the loop between ocean and land. This approach creates a full-circle system that benefits both the surrounding farm and ecosystem.
